We are thrilled to introduce our first-ever sour beer, Sour-endipity, an ale brewed with real kiwi fruit!
This beer took months to develop. To find the right flavor, Head Brewer Matt Burkhardt enlisted the help of our loyal customers at the Rolla R&D Brewpub. In December 2017, we held a Battle of the Sours, pitting a lemon sour beer against a kiwi sour beer. The kiwi flavor prevailed as it nicely balances the base beer – a sour wheat ale. The resulting Sour-endipity is sharp, sour and effervescent with a dry finish. Refreshing and thirst quenching, it is perfect for summertime!
To give you a little background about this style, sour beer is one of the oldest types of beer in history. Before pasteurization and sterilization was understood, many beers had the potential to have a somewhat sour note because of wild fermentation or naturally occurring bacteria in the environment. Over the last couple of years, this style has started to gain popularity because adventurous craft beer drinkers are always looking for something new and craft beer brewers are always looking for a challenge.
Because this was the first time we’ve kettle soured a beer, Burkhardt was extra diligent. He even slept overnight in the brewery to make sure everything ran smoothly! After creating the wort like in other normal brews, we ran the wort into the kettle and cooled it to a temperature just right for bacteria growth. We used lactobacillus to sour the beer. This bacteria is a probiotic that converts sugars to lactic acid. It’s the same live culture you find in unsweetened yogurt and sauerkraut.
Once the lactobacillus was pitched, Burkhardt had to wait. He checked the pH and acidity every few hours to get the exact level of sourness he wanted. Then, the wort was boiled again and hops added. Boiling killed the remaining lactobacillus, ensuing the bacteria cannot contaminate future batches of beer. This is important because if not controlled, this bacteria can grow rapidly in our equipment and can cause off flavors in all of our other beers. And we definitely don’t want that! The sour beer was then fermented using an ale yeast strain. The kiwi fruit concentrate was added at the end of fermentation.

Oktoberfest
/in Events/by Public House Brewing Co.Put on your lederhosens and dirndls and come to the Rolla R&D Brewpub for our 8th Annual Oktoberfest Saturday, September 29. This isn’t your typical Oktoberfest! There will be a variety of tastes with several different breweries and wineries attending from all over the state. Along with plenty to drink, we’ll have live music and food vendors as well.
General admission tickets are $25 in advance or $30 the day of the event. VIP tickets are $40 which includes a special VIP glass and meal ticket. General admission is from 3 – 6 p.m. and VIP is from 2 – 6 p.m. VIP tickets sold out last year so get them before they’re gone! Proceeds will benefit The Community Partnership.

St. Louis Craft Beer Week is a nine-day festival that celebrates the history of beer in the St. Louis area. Many breweries, distributors, bars, restaurants, retail and beer fans come together in promoting and enjoying our favorite thing, craft beer!
Each night an event will be going on all around St. Louis. Pair food and beer, talk to brewers and other beer enthusiasts, and try local craft beverages.

Heritage Music Festival is Bigger and Better This Year
/in Uncategorized/by Public House Brewing Co.A diverse mix of up-and-coming Missouri musicians will converge in The Gardens for an expanded two-day Heritage Music Festival Saturday, June 23 and Sunday, June 24. This is the second year we are bringing music lovers together in our beautiful backyard (540 State Route B, St. James, Mo. 65559).
Guests will have access to the new rustic Italian-style menu featuring locally sourced food and expertly paired craft beverages at the St. James Taproom.

Tickets for both days of the festival are $12. Saturday only admission is $10. Sunday only admission is $5. Children under 5 are free. Tickets provide entry into The Gardens to listen to the bands. Guests receive a wristband at the gate that allows them to come and go as they please.
Part of the proceeds from the festival benefits the Friendship School Foundation, an organization dedicated to engaging and educating local community on sustainability best practices.

Pints for purpose newburg children’s museum

Grab a Beer, Pizza & a Movie in The Gardens

While watching a movie under the stars surrounded by a beautiful garden setting, enjoy a wood-fired pizza or try a dish from our new menu. If you are looking for the perfect beer or wine to pair with your food, our brewmaster and the St. James Winery’s winemaker have you covered.
Admission is free. Come early to grab a seat or bite to eat. Please, no outside food or drink is allowed, but you may purchase wine (keep receipt) from the St. James Winery Tasting Room and bring it in The Gardens.
The movie starts after sunset – it has to be dark before you can see the movie on the screen. Limited seating is available, so feel free to bring your own. Nights can be chilly, so bring jackets or blankets as needed.

Taste Something New at the St. James Taproom

Using fresh, locally sourced pork from Gemstone Farm and beef from Moon Dance Farm, the PHBC culinary team worked hard to create unique Italian dishes that make every day delicious in our community. Deriving inspiration from the Italian heritage of our region, the new selections are sure to satisfy any palate, especially with each dish featuring an expertly paired craft beverage from our brewmaster and from St. James Winery’s winemaker.
“We are taking the rustic Italian-style and putting our own spin on it. It’s exciting changing up the menu by focusing on fresh, local products for every dish,” said Chef Gabe. “We get to experiment, enjoy ourselves, and know that we are putting out the best products that we can.”
Chef Gabe moved on to explain that the creation process for the new menu took nearly four months to finalize. He personally sampled each food prior to selection and incorporated the PHBC craft beer and St. James Winery wine into the recipes for many of the dishes. He further expressed a mindfulness toward those who have certain dietary choices or restrictions. Simply ask your server about what options the St. James Taproom has to offer.
